Soft Gulab Jamun in Rose Syrup

Low fry, warm syrup, long soak. Rush any of those and they stay raw in the centre.

From my kitchen notebook

Low oil, patient fry, warm syrup. If the syrup is boiling when the jamun go in, they collapse instead of soaking.

Why this recipe works

Gulab jamun fails on high heat. The outside browns while the centre stays doughy. I fry patiently on medium-low, turning gently until deep mahogany, then drop them straight into warm syrup.

Smooth balls without cracks matter. Cracks open in oil and the jamuns weep. Overnight soaking is kindness to future you.

Expert kitchen tips

Ingredients

Step-by-step method

  1. Soft Gulab Jamun in Rose Syrup — step 1Make the sugar syrup: combine sugar, water, cardamom and saffron. Boil until sugar dissolves, then simmer 5 minutes. Add rose water. Keep warm.
  2. Soft Gulab Jamun in Rose Syrup — step 2Mix milk powder, flour and baking soda. Rub in soft butter until crumbly.
  3. Soft Gulab Jamun in Rose Syrup — step 3Add milk little by little and knead into a soft, smooth dough. Don't over-knead.
  4. Soft Gulab Jamun in Rose Syrup — step 4Divide into 20 equal balls. Roll into smooth balls without any cracks — cracks cause them to break in oil.
  5. Soft Gulab Jamun in Rose Syrup — step 5Heat oil on medium-low heat. Fry the balls slowly, stirring gently, until deep mahogany brown all over (5–7 min). Don't rush with high heat.
  6. Soft Gulab Jamun in Rose Syrup — step 6Immediately transfer hot fried balls into the warm syrup. They will soak and double in size.
  7. Soft Gulab Jamun in Rose Syrup — step 7Rest in syrup for at least 2 hours (overnight is better). Serve warm or at room temperature.
💡 If I am cooking this for guests: low and slow frying is the secret — high heat will brown the outside while the inside remains raw. The oil should sizzle gently, not violently.

Serving warm or soaked

We eat gulab jamun warm out of the syrup for soft centres, or after an overnight soak when the rose flavour runs all the way through. A tiny scoop of vanilla ice cream turns it into a dinner-party plate.

Keep the balls submerged in syrup in the fridge for two to three days. Warm gently in the syrup before serving — never microwave dry balls or they toughen. Leftover syrup is lovely drizzled over plain yogurt or kheer.
