Italian food taught me restraint. The first carbonara I made, I reached for cream because every takeaway version looked pale and thick. An Italian friend laughed, took the carton away, and made me finish the pasta in the pan with egg, cheese, and starchy water. That plate ruined cream carbonara for me forever.
How I cook this
What I keep from Italian home cooking is technique more than long ingredient lists: salt the pasta water properly, pull the noodles early, and emulsify sauce with pasta water so fat and starch cling instead of pooling. Regional pasta logic also matters. Egg-rich doughs lean north; durum-and-water shapes lean south. At home I am not rolling sfoglia every Tuesday, but I do respect that carbonara wants guanciale and pecorino, and that pizza wants a hot oven and fewer toppings than my younger self piled on.
