Why this recipe works
Ribollita literally means "reboiled," and that name is the recipe's philosophy. In Tuscan farmhouses, leftover minestrone met stale bread and returned to the pot the next day, becoming something thicker, silkier, and more soulful. I learned to trust the second day — the bread melts into the beans and the kale softens into the broth until a spoon almost stands up.
Do not rush the soffritto. Onion, carrot, and celery need time to sweeten. Cavolo nero (Tuscan kale) is traditional; regular kale works if you strip the tough stems. And please use real stale country bread — soft sandwich bread turns pasty.

Ingredients
- 300g dried cannellini beans, soaked overnight (or 2 cans, rinsed)
- 1 large onion, 2 carrots, 2 celery stalks, finely diced
- 4 garlic cloves, sliced
- 400g cavolo nero or kale, stems removed, chopped
- 1 can crushed tomatoes
- 1 sprig rosemary, 2 bay leaves
- 4–5 thick slices stale rustic bread
- Extra-virgin olive oil, salt, black pepper, chilli flakes optional
- Parmesan rind (optional but excellent)
Step-by-step method
- If using dried beans, simmer in fresh water with a bay leaf until tender, 60–90 minutes. Reserve the cooking liquid.
- In a heavy pot, warm a generous pour of olive oil. Soften onion, carrot, and celery on medium-low for 12–15 minutes until sweet.
- Add garlic and rosemary for 1 minute. Stir in tomatoes and cook 5 minutes.
- Add beans, Parmesan rind, and enough bean liquid (or stock) to cover generously. Simmer 25 minutes.
- Stir in kale and simmer until tender, 15 minutes. Season boldly.
- Lay bread into the pot or in serving bowls and ladle soup over so it soaks. Rest 10 minutes. For true ribollita, cool, refrigerate overnight, and reboil gently the next day until thick.
- Finish each bowl with raw olive oil and black pepper.
