British food in my kitchen is about doing a few things carefully: batter cold and oil hot, potatoes roasted hard, gravy built from the tray, pastry on a cooled filling. The first steak pie I made steamed the puff lid because I was impatient. Lesson learned.

Sunday roast is a timing puzzle more than a single recipe. Chicken rests while potatoes finish and gravy gets scraped up from the fond. Skip the rest and you pour grey juices on the board.

Fish and chips fail when the fish is wet or the oil is timid. I dry the fish, keep batter cold, and refuse cafeteria mushy peas โ€” mine get butter and mint.

Sticky toffee pudding is date sponge plus hot butterscotch poured so it soaks. Overbake and it turns dry; under-soak and it tastes like plain cake with sauce beside it.

Hot filling steams puff pastry soft. I cool it first.

Rest the roast

Ten to fifteen minutes. Use that window for gravy and potatoes.

That contrast is the crunch. Lukewarm oil makes greasy fish.
