Step-by-step method

  1. Wash rice and soak for 20 minutes. Drain.
  2. Bring milk to a boil in a heavy-bottomed pan, stirring to prevent sticking. Reduce to medium heat.
  3. Add soaked rice to the boiling milk. Stir frequently and simmer for 25–30 minutes until rice is cooked and milk thickens considerably.
  4. Add sugar and crushed cardamom. Stir well and cook another 5–10 minutes.
  5. Add saffron milk and mix. The kheer will turn a beautiful golden hue.
  6. Remove from heat, add rose water and half the nuts. Let cool slightly.
  7. Serve warm or chilled, garnished with remaining nuts and rose petals.
💡 Lesson I learned the messy way: the key to great kheer is patience — keep stirring on medium heat. Never leave it unattended or the milk will scorch at the bottom.
