Creamy Saffron Kheer
Saffron in warm milk first, then slow rice. I scrape the bottom every few minutes.

Why this recipe works
Kheer is meditation with a spoon. Milk wants to scorch if you walk away. I stay nearby, stirring the bottom, watching it thicken until the rice looks swollen and luxurious. Saffron turns it gold; rose water at the end is optional perfume.
Serve warm for comfort or chilled for festivals. Both are correct.

Ingredients
- 1 litre full-fat milk
- ⅓ cup basmati rice
- ⅓ cup sugar
- 4 green cardamom pods, crushed
- Pinch of saffron in 2 tbsp warm milk
- 2 tbsp chopped pistachios
- 2 tbsp flaked almonds
- 1 tbsp rose water
- Dried rose petals for garnish
Step-by-step method
- Wash rice and soak for 20 minutes. Drain.
- Bring milk to a boil in a heavy-bottomed pan, stirring to prevent sticking. Reduce to medium heat.
- Add soaked rice to the boiling milk. Stir frequently and simmer for 25–30 minutes until rice is cooked and milk thickens considerably.
- Add sugar and crushed cardamom. Stir well and cook another 5–10 minutes.
- Add saffron milk and mix. The kheer will turn a beautiful golden hue.
- Remove from heat, add rose water and half the nuts. Let cool slightly.
- Serve warm or chilled, garnished with remaining nuts and rose petals.

I like kheer slightly warm on festival nights and fully chilled the next afternoon. A few saffron strands and chopped almonds on top make it look finished without extra work.
It thickens a lot in the fridge — loosen with cold milk when you serve. Keeps three days covered. Day-two kheer is my favourite texture; stir gently so the rice does not turn to paste.
