Step-by-step method
- Mix sauce and chill. Divide beef into 8 loose balls (double smash stack) — do not knead.
- Heat cast iron or griddle until very hot. Toast buns in butter; set aside.
- Place balls on griddle, smash firmly with parchment and a press for 8–10 seconds. Season tops with salt and pepper.
- Cook until edges brown and crisp, ~2 minutes. Flip, add cheese, cook 30–45 seconds more.
- Stack two patties per bun with sauce, onion, pickle, and lettuce. Serve immediately.
