Why this recipe works
Puri is theatre. The moment it balloons, kids cheer and adults pretend they are not competing. Firm dough and hot oil are the only real secrets. Soft dough drinks oil; cool oil gives flat discs.
Press gently with a slotted spoon as it fries — that little encouragement helps the steam inflate the pocket.

Ingredients
- 2 cups whole wheat flour
- ½ tsp salt
- ½ tsp ajwain seeds (optional)
- Water to knead (approx ½ cup)
- 1 tsp oil in dough
- Oil for deep frying
Step-by-step method
- Mix flour, salt and ajwain. Add 1 tsp oil and knead with water into a firm, tight dough (firmer than chapati dough).
- Rest the dough covered for 15–20 minutes.
- Divide into 12 small balls. Roll each into a smooth circle about 3–4 inches in diameter.
- Heat oil in a deep kadhai on medium-high heat. Test oil by dropping a small piece of dough — it should rise immediately.
- Slide a puri into the hot oil. Gently press it down with a slotted spoon — it will puff up dramatically.
- Turn over once and fry 20–30 seconds more until pale golden. Remove and drain.
- Serve immediately while puffy, with aloo sabzi, halwa, or chole.

Eat while they balloon
Puri waits for no one — I fry a small stack, call everyone to the table, then fry the next round. Serve with chole, aloo sabzi, or a spoon of sweet halwa when we want a proper Sunday breakfast.
Leftover puris soften in a box. Refresh on a dry tawa for a minute each side, or tear into chaat with chutney and sev. Unfried dough balls keep overnight in the fridge under a damp cloth for a second fry the next morning.
