Crunchy Bhel Puri
Everything stays separate until the last toss. Soft bhel means you waited too long.
Recipe card
Why this recipe works
Bhel is assembly art. Everything waits in bowls; the toss happens last. Once chutney hits puffed rice, the clock starts. I keep sev until the final second so it stays crunchy.
Sweet-spicy balance is personal. More tamarind for mellow sweetness, more green chutney for heat. Taste as you toss.
Expert kitchen tips
- Prep mise completely before mixing.
- Toss quickly and serve in cups immediately.
- Add sev last for maximum crunch.
Ingredients
- 3 cups puffed rice (murmura)
- 1 cup sev (fine chickpea noodles)
- 1 potato, boiled and diced
- 1 onion, finely chopped
- 1 tomato, finely chopped
- ½ cup pomegranate seeds
- 3 tbsp tamarind chutney
- 3 tbsp green mint-coriander chutney
- 1 tsp chaat masala
- ½ tsp black salt
- Fresh coriander for garnish
Step-by-step method
- Keep all ingredients ready before starting — Bhel Puri must be assembled and eaten immediately or the puffed rice goes soggy.
- In a large bowl, combine puffed rice, potato, onion, and tomato.
- Add both chutneys and season with chaat masala and black salt.
- Toss everything quickly and vigorously.
- Add sev and pomegranate seeds. Toss once more.
- Divide into serving cups, garnish with extra sev, coriander and a drizzle of tamarind chutney.
- Serve immediately — Bhel Puri waits for no one!
Estimated nutrition
About 320 calories per serving (based on 4 servings). Values are estimates for home cooks and vary by brands, oil used, and portion size — not lab-analysed.
Mix and eat immediately
Bhel is a last-second toss — I keep puffed rice, sev, and chopped veg ready, then fold in chutneys only when plates are in hand. Wet mix sitting around turns into soggy sadness.
Store dry components separately in airtight boxes for a week. Leftover mixed bhel rarely survives, but any spare chutney keeps a day in the fridge for the next chaat night. Extra sev goes on yogurt or salad the next day.
